This is simple to solve, but a tad difficult to describe.
This is simple to solve.  The first flight, to Casablanca, departs at 10:00On the modified clock, 1:00 appears in the 10:00 position, so use the first letter of the city, C.
Start at 1pm (for 1st letter)Look up the flight that leave at 1pm (Stockholm) and that the letter position found on in the clock shown in the video.  In this case, the 6th letter.  H

Continue around the clock (Bangalore, G) etc. to get H-G-R-P-O-R-A-E-R-C-A-T
The second flight, to Milwaukee, departs at 7:00.  On the modified clock, 5:00 appears in the 7:00 position, so use the fifth letter of the city, A.
(these letters would then ANAGRAM OUT TO 'CARTOGRAPHER')  but you can continue by placing them in their original departure time order. C-A-R-T-O-G-R-A-P-H-E-R

Continue down the list of departures, converting the listed departure time using the modified clock to find the correct letter to use:

Casablanca 10:00 -> 01 => C

Milwaukee 7:00 -> 05 => A

St Petersburg  9:00 -> 07 => R

Mexico City 12:00 -> 09 => T

Rio de Janeiro 5:00 -> 12 => O

Bangalore 2:00 -> 04 => G

Johannesburg 3:00 -> 11 => R

Vancouver 11:00 -> 02 => A

Indianapolis 4:00 -> 08 => P

Stockholm 1:00 -> 06 => H

Buenos Aires 8:00 -> 10 => E

Bordeaux 6:00 -> 03 => R

The result: C-A-R-T-O-G-R-A-P-H-E-R
